Nutrition Paste I
Ingredients
- 2 oz. carrots
- 2 oz. celery
- 8 oz. silken tofu
- 11 oz. berries
- 3 oz. beets
- 5 oz. kale
- 1 banana
- 2 C. “milk”
- 1 lemon, zest and flesh*
- 2 Tbsp. flax seeds (optional)
Instructions
- Put in blender. Make into paste.
- Makes ~2 quarts (2 servings).
Cook’s notes
I use frozen berries (a triple berry mix – blackberries, blueberries, raspberries), frozen beets, and frozen kale. Even a high speed blender will choke on that much frozen fruit. You can either wait, patiently, put the blender in the fridge for the night, or, as I often do, heat up the “milk” for about two minutes in the microwave and then use that.
I *never* measure this recipe, just eyeball it. I measured it this time just to give some semblance of a usable recipe.
* I use a vegetable peeler to peel off the yellow part, then I use a knife to cut off all of the bitter, white pith and then add the flesh.
