Southwestern Black Bean Soup

Ingredients

  • 1 onion, chopped
  • 1 red pepper, chopped
  • 3 cloves of garlic, minced
  • 1 can diced tomatoes
  • 2 cans black beans, rinsed
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano (Mexican if possible)
  • 1 Tbsp. fish sauce (or soy sauce)
  • 1 Tbsp. sherry vinegar (or whatever vinegar you like)
  • 6 C. vegetable broth
  • Salt

Instructions

  1. Heat a soup pot or dutch oven over medium high heat.  Add the onion and a small pinch of salt.  Sauté until soft.
  2. Add red pepper, garlic, chili powder, and cumin and continue to cook, stirring constantly until fragrant – 1-2 minutes.
  3. Add tomatoes, beans,  oregano and broth.
  4. Cook for 15-25 minutes, until red pepper is soft and flavor have melded.
  5. Remove from heat.  Add fish sauce and vinegar.  Taste and adjust seasoning if necessary.
  6. Serve.
