Potato Tortilla Soup

Potato tortilla soup

My partner was feeling ill one day and wanted something spicy and comforting. Sitting in the office, I made up a shopping list for what became this very tasty and comforting soup.

Ingredients

  • 6 Yukon Gold potatoes, chopped to bite-size
  • 2 jalapenos – diced fine
  • 1 large yellow onion, diced
  • 4-5 cloves of garlic, minced
  • 28 oz. canned, diced tomatoes
  • 1 can black beans, rinsed
  • 1 can yellow hominy, rinsed
  • 2 quarts stock (veggie, whatever)
  • 1 fresh lime, juiced
  • Pressure Cooker
  • Salt
  • Pepper

Instructions

  1. In the pressure cooker, saute the onions, garlic, and jalapenos with a couple pinches of salt for ~5 min. Until fragrant.
  2. Add the tomatoes, potatoes, stock and seal the cooker for 5 min.
  3. Release the pressure and add the black beans, hominy, and bring back to a simmer.
  4. Add lime juice, taste for salt and pepper. Serve with tortilla chips (we like to crush ours into the soup)
