Red Pepper Hummus

*Damn, we make a lot of orange food.

 

Ingredients:

  • 15 oz. garbanzo beans (drained if using canned – reserving liquid)
  • 1/4-1/2 C. cooking or canning liquid (or water if you forgot)
  • 2 Tbsp. lemon juice
  • 2 Tbsp. low-sodium soy sauce
  • 2 Tbsp. tahini (or peanut butter)
  • 1/2-1 clove of garlic
  • Dash of cayenne pepper
  • Dash of smoked paprika
  • 1 red bell pepper

Instructions:

  1. Roast red pepper until blackening.
  2. Cover red pepper or wrap in plastic wrap and let steam until cool
  3. Pull the blackened peel off the pepper.  Cut open and remove seeds and membranes.
  4. Add ingredients to blender (high speed works to make the smoothest texture).
  5. Blend until smooth – adjusting liquid if needed.

Cook’s Notes:

You can probably make this in a regular blender or food processor, but my high speed really makes the texture amazing.
