A cousin of mine suggested using jackfruit to make a replica of pulled-pork sandwiches. My mind immediately went to this recipe, which I have missed since mostly ditching pig. I am pleased with the result.

Super tasty, mostly taken from Thug Kitchen PARTY GRUB but with what I think is better texture and happier flavors. Created in 2 parts although the sauce can be made ahead of time and either refrigerated for a couple of weeks or frozen until the mood for good enchiladas strikes you.
Goes with the broccoli slaw. Probably great on anything else. Find miso in the Asian aisle or at your nearest Asian market.
This was supposed to be an easy dinner day, but the g********d lentil “sausage” mix went bad and I had to punt. This is based off that recipe, but with some changes. The family pronounced it good, as do I.
