Pinto Beans “Queso”

Delicious, quick, rewarding snack. Put on all things Mexican.


  • 3 C. Pinto beans (drained)
  • 1 Tbsp. tahini
  • 1 Tbsp. lemon juice
  • 1/4 tsp. mustard
  • 1/2 tsp. soy sauce
  • 2 Tbsp. nutritional yeast
  • 1/4 tsp. onion powder
  • 1/8 – 1/4 C. broth or water
  • 1-2 C. salsa
  • Hot sauce to taste


  1. Combine beans, tahini, lemon juice, mustard, soy sauce, nutritional yeast, and onion powder in a food processor and process to desired consistency.  Add broth if too thick.
  2. Stir in salsa and hot sauce.  Taste for seasoning.  Add more soy sauce and lemon juice if necessary.
  3. Serve as a dip or a great bean burrito filling.
