Pressure Cooker Belizean Rice and Beans

Inspired by my brother and his two-year service project in Central America, a delicious and filling meal. If you’re feeling carnivorous, top with chicken stewed in garlic and lime.


TexMex Enchiladas

Super tasty, mostly taken from Thug Kitchen PARTY GRUB but with what I think is better texture and happier flavors. Created in 2 parts although the sauce can be made ahead of time and either refrigerated for a couple of weeks or frozen until the mood for good enchiladas strikes you.


Broccoli Slaw

Excellent way to eat your broccoli. Great mix of sweet, savory, nutty, umami.


Creamy Asian Dressing

Goes with the broccoli slaw. Probably great on anything else. Find miso in the Asian aisle or at your nearest Asian market.


Emergency Make-Pretend Sausage Spaghetti

This was supposed to be an easy dinner day, but the g********d lentil “sausage” mix went bad and I had to punt. This is based off that recipe, but with some changes. The family pronounced it good, as do I.


Vegetable Pho

This is one of the best things I’ve come up with. Good pho doesn’t come from the meat or bones, but from the amazing blend of spices and a few good techniques.
